Bryan's dad brought us some zucchini. I love zucchini but there was way too much for me to eat so I decided I would find a recipe to try. I came across a recipe for Chocolate Chip Zucchini Muffins on the Taste of Home website. This sounded good but I wondered just how good they would be. When Bryan and the kids came in I told them I had made chocolate chip muffins. They began to gobble them up! Bryan asked what was in them and I confessed all the ingredients and Elijah's response was "Your tricking me". I included him in helping make the next batch. When those were done and Elijah ate one he looked at me and said "You must have left out the zucchini in that one." They were so good I just have to share my recipe! Hope you enjoy!
Chocolate Chip Zucchini Muffins
1-1/2 cups all-purpose flour
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded zucchini
1/2 cup semisweet chocolate chips
1/4 cup chopped walnuts or pecans
1 mashed banana
In a bowl, combine flour, sugar, baking soda, cinnamon and salt. Combine the egg, oil, milk, lemon juice and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in zucchini, chocolate chips and walnuts. Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-25 minutes or until muffins test done. Yield: about 1 dozen.
