French Toast Bake

This was discovered when we had a loaf of bread that needed to be used. Found this on Pinterest and everyone enjoys it! The first time I made it plain but now we always add some kind of fruit to it. I always make more than the original recipe so the recipe below is the version that we use. Enjoy!
French Toast Bake
3/4 cup of butter
3/4 cup of light brown sugar
6 eggs
2 1/2 cups of milk
1 tsp of vanilla extract
powdered sugar for sprinkling

1. Melt butter in a bowl and stir in brown sugar till mixed.
2. Pour and spread the butter and brown sugar into the bottom of a 9x13 casserole dish.
3. Beat eggs, milk, and vanilla in a separate bowl.
4. Lay single layer of bread in pan.
5. Spoon 1/2 of egg mixture on bread layer. Place your favorite fruit on top of the egg mixture. (We like blueberries or strawberries)
6. Add 2nd layer of bread and spoon remaining egg mixture
7. Bake at 350 for 45 minutes (covered for the first 30 minutes)
8. Sprinkle with powdered sugar.

White Chicken Chili

As I was scanning through my photos I realized that I have lots of recipes to share with you! Get ready because eventually I will get to them and hopefully give you a few new recipes to try and that your family will love! This one that I am sharing today is from a close friend. She made this a couple of times and we enjoyed it. I asked for the recipe so I could make it for us at home. This recipe she found on Pinterest (with the title Wicked White Chicken Chili), you can find the original recipe here.

White Chicken Chili
  • 2 1/2 pounds boneless skinless chicken breasts cooked and shredded/chopped
  • 4 (15 oz) cans great norther white beans, rinsed and drained. 
  • 2 cups chicken broth
  • 2 (10oz) cans Rotel tomatoes and chilies
  • 1 (14oz) can diced tomatoes
  • 1 1/2 cup blend of diced onion, bell pepper and celery
  • 2 cups frozen corn kernels
  • 1 tsp salt
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 cup nonfat plain greek yogurt (optional) *I do use the yogurt*
I grill my chicken and chop it up and set to the side. Drain and rinse 2 cans of beans and puree in a food processor. In my crockpot (with a crock pot liner) I put the pureed beans and the 2 other cans of beans drained and rinsed. Next I chop up my bell pepper, onion, and celery in the food processor and add to crockpot. Then add all the other ingredients except chicken. Stir together and cook on low for 6-8 hours or high for 5-6 hours. At the end of cook time add in your chicken and stir it in chili. Enjoy!

Banana Muffins


Banana Muffins
4 ripe bananas smashed
2 cups of all purpose flour (I use whole wheat)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
2 eggs
1/2 cup of sugar
1 cup of coconut oil melted
3 TBSP milk
1/2 tsp vanilla
1/4 cup nuts 

Mix flour, baking soda, baking powder, and salt together and set aside. Mix bananas, eggs, sugar, and oil together in a large bowl. Add in dry ingredients and mix together. Add milk and vanilla. Fold in nuts. Bake at 350 for 15-20 minutes for muffins or 50-60  minutes for loaf.

Homemade Peanut Butter

 For about a year I have wanted to experiment with making peanut butter. Not sure how it would work or if it would be worth the effort. Well I finally got some dry roasted peanuts and took the plunge. Elijah helped me and did great at operating the food processor. :)
We put 2 cups of peanuts in the food processor and blended it for about 2 minutes. Then repeated until all the peanuts were gone. Now we have peanut butter! I have been using it in some recipes, but too nutty tasting for us to eat plain. :) The kids had fun seeing the process...it was neat and very easy!

Baked Pork Chops

Bryan is always so good about going by the grocery store to pick up things we need and if he happens to see a good sale we will pick that up too. He recently found some pork chops on sale and bought 2 packs (which is what our family would need :)). We don't eat pork often so cooking it is not something I am very good at. :)
Isaac was helping with supper the night I was going to fix pork chops. He likes to cook and be my helper. Isaac really likes experimenting. I knew that we wanted them baked and to seal in the juiciness I needed to sear them on both sides. We started off with Isaac rinsing them off and patting them dry. Next we dipped them in buttermilk and seared them in a skillet. Once they were seared we dipped them in bread crumbs and spices. This mixture has no set amounts...I used some bread crumbs I had left and added the seasonings that we like (paprika, onion powder, seasoning salt, etc.).
We dipped both sides in the bread crumb mixture and placed them in a greased (I use palm shortening) casserole dish. With the oven preheated to 350 degrees we covered them with foil, placed them in the oven, and baked them for 45 minutes. While they were baking in the oven Isaac and I made some gravy in the skillet we used to sear the pork chops in. After the 45 minutes was up we got them out and drizzled the gravy over the top, covered them back up and baked for another 20-30 minutes.
I didn't know how this would turn out, especially with the gravy on it...but these were absolutely the best!! I am sure it was due to Isaac and I doing this together. :) We all devoured them and will keep this recipe for future use. The gravy really made these delicious!!

Pumpkin Chocolate Chip Cookies

Bryan and the kids stopped by an Amish home one Saturday and bought me a pumpkin. :) I love it that they think about me. :) They know that last year I was so excited to learn how to cook a pumpkin and scoop out the goody in the middle, then make some delicious Chocolate Chip Pumpkin Muffins. YUMMY!!

After we let this pumpkin sit on the counter (it was a really pretty pumpkin) for a few days (maybe even a week or two) I found some time to cook it and puree the inside. I froze most of it but kept some of the puree in the fridge.

As I was searching the Internet for a soup recipe I came across a Pumpkin Chocolate Chip Cookie recipe and thought I would give it a try. Since the kids like to cook I thought this would be a perfect time for them to help out.
Talk about soft and chewy!!! Fall is in the air and pumpkins are everywhere...so this is a perfect time to try this recipe!
Chocolate Chip Pumpkin Cookies
3 cups all-purpose flour (I used freshly ground whole wheat flour)
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon (or 1 tsp if you like)
1/2 teaspoon ground nutmeg
1/2 teaspoon pumpkin pie spice
1 cup butter, at room temperature
3/4 cup brown sugar
3/4 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1 cup pumpkin puree (not pumpkin pie filling)
1 1/2 cups chocolate chips

Directions:
1. Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
2. In a medium bowl, whisk together flour, salt, baking soda, baking powder, and spices. Set aside.
3. Using a mixer, cream the butter and sugars together until light and fluffy, about 3-4 minutes. Add the egg, vanilla, and pumpkin and mix until combined, about 3 minutes. Slowly add in the dry ingredients. Mix until just combined. Stir in the chocolate chips.
4. Drop by large, rounded tablespoons onto prepared baking sheet. Bake for 10 minutes or until cookies are just beginning to brown around the edges. Let the cookies cool on the baking sheet for two minutes. Transfer to a wire cooling rack and cool completely.

In the recipe above I included the adjustments I made. These cookies were so soft and chewy that when I stacked them to store them they stuck together. This recipe is definitely a keeper and we will be making these again and again and again. :) Enjoy!!

Making Jam and Preserving Food

I have to admit that I am a "city girl". Never done any canning, preserving, or freezing of any kind. I have just always bought what I needed at the grocery store or have been blessed by someone giving us these things.
I didn't even know where to start. Since we are trying to eat healthier I knew that eventually it would be good if I could learn these things. Well when we moved here...ready or not it was time to learn.
Uncle David and Aunt Saundra have blessed us with so much. The first thing was blackberries. I did make some blackberry muffins and blackberry jam. My family was not fond of those things because of the seeds. :) Then Uncle David and Aunt Sandra called to ask if we wanted some grapes. We LOVE grapes (the kind from the store that are seedless) so I quickly said "yes". The kids and I went to get them and Uncle David had picked us a BUNCH of grapes!! And they were NOT seedless. We quickly went to looking into making Grape Jam.
We put the kids to doing the "fun" part, deskinning them. That's right, they were squeezing out the pulp and seed, placing the skin in one bowl and the pulp in another. While Bryan and I were boiling the pulp, deseeding it, and chopping up the skins. Together we made some really delicious grape jam!
We made a total of 35 jars! It was alot of work, but so much fun! We all have enjoyed eating this jam and will definitely do this again next year! :) *We followed the recipe from the Sure Gel box. I would love to learn how to make jam without using the box pectin.*
 We have also been blessed with lots of vegetables! Mostly okra. So the kids and I also worked at cutting up okra and freezing it.
 Isaac gets the best okra cutter award! This young man worked really hard and did a great job! The kids pitching in and helping is a blessing to me and a time to learn for them.
 Uncle David and Aunt Sandra also blessed us with four 5 gallon buckets of apples! They let us borrow their apple peeler and that made it possible for us to get these taken care of. :)
 Here is Sarah peeling apples. It was even easy enough that Elijah could peel them while Isaac, Sarah, and I chopped them.
 Such a handy little gadget! Will use this again next year if we get more apples.
 Here is Mommy (me) chopping up the apples. We made apple butter, froze some apples, made apple muffins (froze some for later), and apple breakfast cookies!  All of it is sooo yummy!!
 We even have an apple tree in the back yard and some of these apples came from our own tree! The kids loved that!

Then we canned some tomatoes, made salsa with some tomatoes, put up 48 ears of corn (Bryan bought from the Amish), creamed corn (I learned how to do that), and froze some squash. (Now you know why I haven't been able to keep up with my blogging.) I wasn't quite prepared to tackle all of this right after moving but God helped us to get it all done! Now we have plenty to enjoy in the months to come.

Whole Wheat Chocolate Chocolate Chip Cookies

Isaac's favorite cookie is the Chocolate Chocolate Chip Cake Mix cookies. We discovered those while we were living in Alabama and someone made them for church. I got the recipe and they were so easy and quick to make. I have made them lots of times and even made them using Strawberry cake mix, or Red Velvet cake mix. BUT not the "best for you" cookie. :(

As we are trying to get away from processed foods and eat more healthier foods, even when it comes to sweets :), I found this recipe for Whole Wheat Chocolate Crinkle Cookies. Yes, it is from Heavenly Homemakers website, her website is full of great stuff! So I thought I would try these for Isaac's birthday last month. They were easy and quick to make and best of all they were sooo yummy and healthy! So I just have to share this recipe.

Chocolate Chocolate Chip Cookies (Whole Wheat Chocolate Crinkle Cookies)
3 eggs
1/3 cup unsweetened cocoa powder
1 1/2 cups sucanat (or brown sugar)
1/2 cup melted coconut oil (butter would also work)
1 teaspoon baking powder
1 teaspoon vanilla extract
2 cups whole wheat flour (I use freshly ground flour from hard white wheat.)
1/2 cup white chocolate chips (optional)
1/2 cup chocolate chips (optional)

Whip together eggs, cocoa, and sucanat. Stir in melted coconut oil, baking powder, and vanilla. Mix in flour until a nice dough has formed. Fold in white chocolate and chocolate chips. Spoon teaspoon sized balls of dough on to a greased cookie sheet, about 2 inches apart. Bake in a 350° for 8-10 minutes. Allow the cookies to sit on the cookie sheet for about five minutes before removing. Makes about 24 cookies.

Homemade Peanut Butter Granola

Just had to share our new favorite breakfast cereal! A few months ago I looked up two recipes for homemade granola and came up with my own version. This has been a great breakfast and really good if you add some strawberries or blueberries to the top covered in milk...YUMMY!!
Or you can top off your favorite yogurt with some and enjoy!
Homemade Peanut Butter Granola
4 cups of old fashion oats
½ cup of coconut oil
½ cup of peanut butter
2/3 cup of honey
1 cup of coconut
½ cup of pecans
½ tsp of cinnamon
½ tsp of vanilla extract

In a small sauce pan, melt together coconut oil, peanut butter, and honey. Remove from heat and add vanilla. Stir all remaining ingredients together in a large bowl. Drizzle on the honey, peanut butter and coconut oil mixture and stir well. Pour mixture onto a large, parchment paper lined baking sheet and spread out. Bake at 300° for 30 minutes or until golden, stirring after the first 15 minutes. Let set out and cool. Store granola in an air tight container.

I have to make this once a week around here so when I made some the other day I just doubled the recipe. :) Hope you enjoy it as much as we do!

Thankful Thursday!

Peanut Butter Homemade Ice Cream (6 qt freezer)
1 - 16oz container Cool whip
1 can Eagle Brand
white milk (May use Strawberry milk for strawberry flavor or Chocolate milk for Chocolate flavor.)
1 1/2 cups of crunchy peanut butter (omit if you are making strawberry or chocolate)

Melt your peanut butter just a little so that it is easy to stir. Mix peanut butter and sweetened condensed milk together and then fold in cool whip. Pour that into your ice cream freezer and finish filling it up to the fill line with white milk. Use a long handled spoon to stir all that together. Place into ice cream freezer bucket. Start freezer. Add ice with layers of ice cream salt. Enjoy!!

Homemade Cheese-its

 I saw these Homemade Cheese-its on Pinterest and just had to give them a try. I am so glad I did! They are very easy and really delicious!!
 They are not crispy like the ones you buy at the store. They are soft and NOT full of all those "other" ingredients. :) Yummy...Enjoy!
Homemade Cheese-Its
8oz shredded cheddar cheese (I have used sharp aged white cheddar too)
1 cup all-purpose flour (I used fresh ground whole wheat)
4 tbs unsalted butter, softened
1/2 tsp salt
3 - 4 tbs ice water

1. First, mix together the shredded cheese, salt and the softened butter. (I used sharp aged white cheddar cheese, but you can use whatever kind of cheese you like. I shredded my own cheese just because I think it has better flavor and melts better, but you can use pre-shredded too to save some time!) Add in the flour and mix until the dough looks like little fluffy clumps. Then, with the mixer running begin adding the ice water and mix until a soft dough forms. (use as much ice water as you need for a dough to form).

2. Divide the dough in two, form each into a disk and wrap in plastic wrap. Refrigerate the dough for about 30 minutes. Then, roll the dough out on a floured surface into about an 1/8 inch thickness and using a fluted pastry cutter (I used a table knife), cut the dough into about 1 inch squares.

3. Preheat your oven to 375 F and line your baking sheets with parchment paper. Transfer your little cheese-its onto the parchment paper, make a hole in the center of each with a toothpick. Bake for about 7 - 10 minutes (baking time will depend on your oven, just watch them carefully so they don't burn!), or until they have puffed up and the edges begin to brown. Let cool before eating. (They are best eaten right away, but you can store them in an airtight container).

Whole Wheat Blueberry Pancakes!

We love pancakes...who doesn't, right? I like adding a little fruit occasionally, especially blueberries! I wanted to share this Blueberry Pancake recipe with you and if you are not in the mood for blueberry pancakes just use same recipe and omit the blueberries for some really delicious plain Buttermilk Pancakes!!
My parents were visiting when I made these (back in February) and my mother just had to take a picture of me with a stack of these yummy pancakes! Writing this post makes me think I need to make some buttermilk pancakes in the morning. :)
Whole Wheat Blueberry Pancakes (Buttermilk Pancakes)
4 cups of whole wheat flour (I use freshly ground whole wheat flour)
4 tsp baking powder
2 TBSP of sugar (I use sucanat or sugar in the raw)
1 tsp of salt
1 tsp of baking soda
4 eggs
3-4 cups of buttermilk (enough to make batter the right consistency. You may have to use more than 4 cups)
2-3 cups of blueberries (enough to your liking)

Mix all the ingredients (except the blueberries) really well together. Then fold in your blueberries. Heat up your griddle. I use butter to grease my griddle and then with a 1/3 cup measuring cup I scoop out the batter and pour on to the hot griddle. Once you see tiny bubbles starting to pop up then flip pancake and cook until both sides are golden brown. Serve warm with your favorite syrup or if you are like our Elijah you will just eat them as they come off the griddle. :)

Whole Wheat Blueberry Rolls

Thursday was my Dad's 60th birthday and he asked me to make him some blueberry rolls to take to work. I was very happy to do that for him and honored that he would ask me. So I thought I would share the recipe with you on here.

Whole Wheat Blueberry Rolls 
For the dough I use the same recipe that I use for my whole wheat cinnamon rolls.
Then when you roll out the dough sprinkle it with sugar in the raw (as much as to your liking). Next place fresh or thawed blueberries on top, Make sure you cover the dough with the blueberries. Then follow the rest of the cinnamon rolls recipe. Enjoy!!

How many meals do you eat at home?

Bryan and I calculated one day just how many meals we eat at home and it was ALOT!! Because we homeschool the kids and I usually eat all 3 meals at home and Bryan is usually home for breakfast and supper. Since we have been trying to eat healthier, eating out is one of those things we are trying not to do often.

So....if the kids and I eat 3 meals a day at home for 7 days a week, that is a total of 21 meals at home a week. Of coarse one of those meals might me an occasional eat out treat. That's still a total of 20 meals a week. If that is 20 meals a week for one person and there are 6 of us that do that, that brings a total to 120 meals eaten at our home in a week (give or take a few). Phew....that is a lot of dishes! LOL!

Wanted to share one of those meals we had, it is baked chicken, home grown canned green beans, and REAL mashed potatoes. Yummy and wasn't to hard to make! I am finding out that eating healthier doesn't require rocket science...just a little time and a whole lot of LOVE! :)

Baked Oatmeal Cups

As I was looking at pinterest the other day I saw “Baked Oatmeal” and it was getting a lot of pins! I realized these are just like some that I have been making and we LOVE them! I got my original recipe from Heavenly Homemakers and made a few adjustments! :)

Thought I would share my recipe and pictures with you. They are a great breakfast food. Since we have been trying to eat healthier, which means not eating the packaged oatmeal...these are a great substitution. Very easy and super yummy!! :)
Baked Oatmeal Cups 
 2 cups rolled oats
1/2 teaspoon sea salt
1 teaspoon baking powder
1/2 cup honey
2 eggs
3/4 cup milk
1/3 cup melted butter
1 tsp of cinnamon
Chopped apples

Mix together oats, salt, and baking powder. Stir in honey, eggs, milk, and melted butter. Scoop batter into 12 paper lined muffin cups. Sprinkle apples into the center of each cup. Bake in a 350° for about 30 minutes, or until the oats are golden brown. These are easier to eat with a fork but if we eat leftovers of them a fork is not required. :)

 We have tried these with chocolate chips instead of apples and that is good too, but the apple is our favorite!! If you use the chocolate chips you might want to leave out the cinnamon.

*To make things easier for me I chop up my apples the night before and put them in a covered bowl until the next morning.

Kinderkitten Cookies

Elijah is my child that loves to help in the kitchen! (Can't believe that in two weeks he will be 6!!)
Matter of fact he has informed me that if we looked at a house to move to he would make sure the kitchen was big enough. :) He is so thoughtful!!
He also loves to look at books and be read to. One of his favorites is a book that someone gave us YEARS ago, Kinderkittens; Who took the cookie from the cookie jar? 
The book has a cookie recipe in the back and of coarse Elijah wants me and him to bake these cookies.
What a great opportunity to spend time with him!
Wanted to share the recipe with you and the pictures of our cookies and my cookie baker. :)

Kinderkitten Cookie Recipe

1 cup unsifted flour
1 tsp baking soda
3/4 cup butter
1/2 cup sugar
1/2 cup finely packed brown sugar
1 egg
1 tsp vanilla
1 3/4 cup of uncooked oats
1 cup raisins or chocolate chips

Mix together flour and baking soda in a mixing bowl. In a larger bowl, blend together butter, sugars, egg, and vanilla. Add flour mixture and mix well. Stir in oats and raisins (or chocolate chips). Drop the batter by teaspoons onto an UNGREASED cookie sheet. Bake at 375 for 10-12 minutes or until cookies are light brown. Remove the cookies with a spatula and place on a rack to cool. Enjoy!!!

Ranch Potatoes

A friend of mine passed this recipe on and I am so thankful!! Love them!! :
Ranch Potatoes
1/3 cup olive oil
3 Tbsp of dry Ranch dressing mix (or more if you would like)
3 pounds small red potatoes, quartered
Place potatoes in a gallon-size zip-lock bag and add oil; seal bag. Toss to coat. Add salad dressing mix and toss again until coated. Bake in ungreased baking pan at 450°F for 30 to 35 minutes or until potatoes are brown and crisp. I usually try to stir mine around at 15 minutes and then finish baking.

I love my casserole dish that the potatoes are in. I purchased this at Lifeway when their fall items went on sale after Thanksgiving. Great deal!!

Loaded Potato Soup

Potato Soup

8-10 medium potatoes peeled and diced up
1/2 white onion
carrots peeled and chopped (I used 5)
1 1/2 cup of fresh or frozen broccoli (I used fresh)
2 Tbsp butter
1 cup of heavy whipping cream
8 oz. of sour cream
1 package of dry ranch dressing (or 3 Tbsp)
1 cup shredded cheese
salt and pepper to taste (or other seasoning you might like)
Milk if needed
Bacon bits are a great way to top off a bowl of this soup!

Place potatoes, carrots, broccoli and onion in a big pot with enough water to cover them and bring to a boil. Let boil until potatoes and carrots are tender. Add butter, and rest of ingredients and mix together well. Let simmer for about 20 minutes or until completely warm (stirring frequently). This is supper delicious with corn bread or homemade crescent rolls. :)

When Elijah was born a dear friend of mine (Wendy) brought us supper. She brought us potato soup and cornbread. It was delicious! I called her and asked for the recipe. When Timothy was born I told my mother that I would love to have potato soup. When I got home from the hospital my mother had made me some potato soup, yummy!! I have to admit this is one of my favorite meals!! Wanted to share the recipe with you. Thank you Wendy for sharing the recipe with me! :)

I have altered the original recipe to add some veggies and we still love it! Just posting this makes me want to make a big pot of potato soup!! :)

Baking Day!

I would love to have one day a week that I just baked and baked and baked and did some food preparations. :) Well last Friday that is pretty much what I did and I LOVED it!!

I thought I would share some of the things I (the kids helped) baked.
I made a pan of whole wheat rolls and 1 loaf  of whole wheat bread! Yummy! (I forgot to take a picture of the loaf of bread)
I made two pans of whole wheat cinnamon rolls. We ate one for breakfast on Saturday morning and I froze the other for another day.
The kids and I made whole wheat pizza crust for the first time! Lots of fun and taste great! (I will post about the pizza later)
Then the kids and I also made whole wheat crescent rolls for the first time too!! I froze the crescent rolls to have another day but we did try them and they were so light and fluffy! :)

It did take some time to bake all of this but it was so worth it!! I will try and post recipes for the pizza crust and the crescent rolls soon.

So which would you rather me post first...the pizza crust or the crescent rolls? :)

Breakfast Casserole

Once a week we have breakfast for supper and everyone loves it!! I was making eggs, biscuits, gravy, and a meat. It would take me forever to get it all ready and then I struggled to have everything warm at the same time. Also I did have a couple of children (Isaac and Sarah) that wanted an omelet.

Well, after reading one of my favorite websites (Heavenly Homemakers) I came across her recipe for a breakfast casserole. It sounded so easy and very similar to an omelet. :) I just had to give it a try!! Of coarse I changed it up to our liking. So here is our version...

Breakfast Casserole

12 eggs
3/4 cup of milk
1/4 tsp of pepper (or more if you like)
1/2 tsp of salt
1 lb of sausage
1/3 cup of bell pepper diced up
1/2 cup of cheese

Brown your sausage and drain. In a bowl beat together eggs, salt, pepper, and milk. Pour egg mixture in a 9x13 greased casserole dish. sprinkle bell pepper, cheese, and sausage on top and then with a fork gently stir them in. Bake at 350 for 40 minutes or until egg is set and done. Serve with biscuits and gravy for a delicious breakfast or supper. :) Enjoy!!!
